I have the privilege of serving and teaching in rural communities around the globe, but I find myself learning something new each time that I travel. For many, guinea pigs are a cute, household or classroom pet. In a poverty-stricken community, they are so much more. They serve as a means to generate income as well as a source of nutrition, where the evidence of chronic malnutrition is easily recognizable. Mississippi is home to the "Sweet Potato Capital of the World" and I love being able to access locally grown potatoes to make fresh muffins! This crop, however, is one that requires many more hands to produce compared to other crops. Without a reliable domestic workforce and without H-2A visa reform, availability of this precious commodity may be in jeopardy. Support MS sweet potato growers!
